Lunch: Mini Bacon and Egg Pies

Mini Bacon & Egg Pies

6 eggs, lightly beaten
2-3 rashers of bacon, roughly chopped
1/2 cup frozen peas
1/2 cup grated cheese
salt & pepper
oil spray or butter

These bacon and egg pies can be spruced up a bit if you like, for example, you could add a couple of tablespoons of milk (as this will make them a bit fluffier), chopped capsicums, white onion, mushrooms, green beans, feta etc. You can play around with the recipe and the ingredients you add to it.

  1. Preheat the oven to 200C. Lightly grease a muffin tray with either oil spray or butter. 
  2. Mix the eggs, bacon, peas, grated cheese, salt & pepper together. Spoon into the muffin tin, about 3/4 fill. Should make around 8 to 10 muffins (depending on the size of your muffin tin).
  3. Cook for 25 minutes or until golden brown and cooked through.
