Guilt Free Treats: Lemon Bliss Balls

Lemon Bliss Balls

1 cup cashews
1 cup almond meal
1 cup shredded coconut
1 tsp vanilla bean paste
zest & juice of 1 lemon
1 tbsp honey (optional)

  1. Place all ingredients into the food processor, blitz on high until fully incorporated and smooth. 
  2. Roll 1-2 tsp worth of mixture into small balls. Roll in desiccated coconut if you wish!
  3. Keep in the fridge or freezer until desired.
