Guilt Free Treats: Ferrero Rocher Bliss Balls

"Ferrero Rocher' Bliss Balls

If you love Ferrero Rocher's (who doesnt!) you are going to love these!! I suggest leaving these in the freezer, as they seem to disappear if in direct eye sight when you open the fridge!

1/2 cup cashews + 1/4 cup extra for rolling
1/2 cup almonds + 1/4 cup extra for rolling
1 tbsp dark cocoa
1 1/2 tbsps kapakapa
1 cup shredded coconut
50gms butter, softened (OR 3 tbsps coconut oil, melted)
2 medjool dates
1/3 cup frozen blueberries

  1. Place all the ingredients but the frozen blueberries in a food processor and blitz for around 2 minutes on high, until the nuts are in little pieces. 
  2. Add the blueberries and process until the blueberries are fully incorporated into the mixture (around another 2 minutes)
  3. Chop the extra almonds and cashews into little pieces, the finer the better. Wet your hands, roll the mixture into balls and then roll in the chopped nuts. Store in the fridge or freezer until required.

  • You can use 1 cup of almonds instead of 1/2 cup each of almonds and cashews.
  • If you don't have kapakapa just use cocoa, cacao, carob or chocolate (melted or not) instead. 
  • I added 1 tbsp of dark cocoa as I wanted an intense chocolate flavour.
  • If you don't want to use medjool dates (or don't have any on hand), increase the frozen blueberries to 1/2 a cup.
