Guilt Free Treats: Carrot & Blueberry Bliss Balls

Carrot & Blueberry Bliss Balls

1 cup nuts (I used almonds, but you can use whatever you like, if you have a nut allergy, use seeds instead!)
1 cup shredded or desiccated coconut; plus more for rolling
2-3 tbsp cocoa (I used 3 tbsps dark cocoa)
1 tsbp honey (optional)
3 1/2 cups grated carrot
1/3 cup frozen blueberries
1/2 cup almond meal

  1. Place all ingredients into a food processor and blitz on high until all ingredients are fully incorporated; this will take 3-5 minutes. You may need to stop the food processor and scrap down the sides.
  2. The mixture will be quite moist/delicate. Roll 1 tablespoon of mixture into a ball, roll in desiccated coconut. Set in the fridge for 2 hours before enjoying.
  3. Store in the fridge or freezer until required.
