2nd - 9th November 2015 Meal Plan

Salmon... there is salmon on the meal plan! First time this year... I was craving salmon, and it happened to be on special at the supermarket, so why not enjoy it! I feel like these meals look labour intensive but I have checked the recipes (and two are my own), and they will be simple!

Recipes

Frittata
3 small orange kumara (roasted), cubed (or other roasted veggies)

2-3 slices of bacon, roughly chopped
1/2 red onion, finely sliced
3 small tomatoes, chopped
handful of kale, roughly chopped
grated parmasan
8 - 10 eggs 
1/3 cup of milk

1 Heat oven to 180C. Place veggies and bacon (if using), into a dish lined with baking paper. Gently whisk the milk and eggs. Pour over the veggies. Gently mix a little. 
2 Bake in the oven for 35 minutes, or until cooked.

Notes: I used 10 eggs in this frittata, it depends on the amount of filling, and the size of your eggs in regards to how many you need. 8 is usually a good number. 


Baked salmon with tomatoes and cauliflower rice

Cauliflower Rice

1 cauliflower, grated
2-4 garlic cloves, crushed
1/2 - 1 red onion, grated

1  Heat frypan to medium heat, place 1 tbsp of olive oil into the pan, followed by the cauliflower, onion and garlic. Regularly stir this mixture for 10-15 minutes. If you want it to be softer, cook it for longer. 


Eggplant Bolognese with zucchini noodles

Notes: I use roughly four zucchini's for the noodles, but then add grated broccoli and any left over cauliflower rice from the previous night. 


Chicken Lettuce Wraps
Recipe to be confirmed - as I am making this one up. Current thoughts... Moroccan spiced chicken, served in a lettuce cup, covered in veggies such as tomatoes, red onion, red capsicum, and maybe a sprinkling of cheese.
