My birthday week - yeow!!! A delicious week of meals here we come!!




Recipes

Nachos 

500-600g beef mince
1 - 2 tbsp olive oil
1 large red onion, chopped
6 garlic cloves, crushed or finely chopped
2 tsp ground cumin
1 tsp ground coriander

1 tsp oregano 
1/2 tsp chilli powder (optional)
1/4 cup tomato paste
400g diced tomatoes
400g can red kidney beans, drained
1/2 - 1 cup beef stock (or water) 
1 tsp salt
Now to sneak some veggies in... you can use whatever you like, here is my go to:1 large carrot, grated
2 stalks celery, finely chopped
1 red capsicum, finely chopped 
handful of baby spinach, (chopped)

1 Heat the oil in a large fry pan, over a high heat, add the chopped onion, garlic and beef mine and cook till the mince is brown.
2 Reduce the heat to medium, add the spices and stir through. Add the tomato paste, kidney beans, stock, carrot, celery, & red capsicum. Simmer for about 20 minutes, until it is a nice thick sauce. Stir through the baby spinach, just before taking the beef mixture off the heat. Season to taste with salt and pepper.

Now... you can serve your nachos with corn chips, tortilla chips, or kumara chips - whatever tickles your fancy! At the moment, my go to for myself and my toddler is kumara chips (he is not older enough to know anything else!), and my partner and 3 year old has corn chips....

If you choose to eat them with kumara chips, use the orange variety, chop them thinly, toss in melted coconut oil and olive oil, place them on a baking tray lined with baking paper, do not have them sitting on top of each other. Cook for 20 minutes at 200C. Turn over, cook for another 10 minutes. Watch them carefully, as they tend to burn, even mine have!

Another great addition to nachos is guacamole and fresh coriander.



Cauliflower fried rice
This recipe is amazing!!! (Click on the title to be taken to it). Adding 3 slices of bacon to it, roughly chopped will make it that little bit more delicious! 



'Hit and run tray baked chicken', roasted asparagus and simple green salad

Asparagus
bunch of aspargus
olive oil 
salt
chilli powder (optional)

1 Break the ends of your asparagus, to do this, hold each end and bend the aspargus until it naturally breaks, keep the tip end for eating.
2 Toss in olive oil and sprinkle with salt and chilli powder.
3 Line a baking tray with baking paper. Arrange the asparagus spears in a single layer on the lined baking tray. Roast for 10 minutes, until your asparagus are lightly browned. 


I recently saw a delicious idea of drizzling over fresh lemon juice or balsamic vinegar, and a sprinkling of Parmesan cheese. 

Simple green salad

Baby spinach leaves1 avocado, roughly chopped
2 celery stalks, roughly chopped

1 Simply toss together and serve on the side.


Italian meatballs

Who said the slow cooker is put away once the months become warmer - not me! This can be done on the stove top in a frypan, but sometimes its just easier to chuck everything into a pot and walk away! Prefect Friday meal.

A few changes to this recipe: Use 1 whole onion in the meatball mixture, and make sure you grate this - this will lessen the possibility of your meatballs falling apart. Use one egg in the meatballs, instead of 2 as the recipe calls for. I used six garlic cloves altogether (3 in the meatballs and 3 in the sauce). In the sauce, I used 2 cans of diced tomatoes and 1 can of whole tomatoes. Along with the parsley I added coriander as well.
